Whether village, city or metropolis, the existence of a city, the condensed coexistence of people, has always been dependent on the supply of food. This applies even more in the radically urbanized conditions of late modernity - and yet it is at least as radically ignored. Food is what is welded into the supermarket shelves. These things do not necessarily fill our bodies and souls: streamlined, industrialized food production is increasingly lacking in answers to these questions of the future. Chipping away at the confidence of consumers.
At the invitation of the Markthalle Neun and the Heinrich Böll Foundation, the edible city will be presenting food culture researcher Dominik Flammer, who is currently involved in his almost encyclopaedic commitment to the "Culinary Heritage of the Alps" in a
Culinarium Alpinum. From the Swisszerland's St Gallen's center of excellence for gastronomy, agriculture and food production. The architect and city-nomad expert Barbara Buser, who is transforming the failed Basel market hall, into a place of food culture. And the author and spatial planner Philipp Stierrand, who - as Germany's most versed expert for a sustainable municipal nutrition policy is also a mentor of civil society nutrition councils.
